  • 1 cup lemon curd (store-bought or homemade)
  • 1 cup drained ricotta cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla essence
  • 3 egg whites
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • Lemon zest (optional for garnish)

  1. In a mixing bowl, blend together the lemon curd and ricotta cheese until you achieve a smooth consistency.
  2. In another bowl, whip the heavy cream along with the powdered sugar and vanilla essence until stiff peaks form.
  3. Gently fold the whipped cream into the lemon and ricotta mixture until everything is well incorporated.
  4. Spoon the lemon-ricotta cream into a piping bag and carefully fill each cannoli shell. Set them aside.
  5. In a separate clean bowl, whisk the egg whites with the cream of tartar until soft peaks begin to form. Gradually add the granulated sugar, continuing to whisk until the mixture turns glossy with stiff peaks.
  6. Preheat the broiler in your oven.
  7. Pipe or spoon the meringue onto the top of each filled cannoli.
  8. Place the cannolis on a baking sheet and broil them for 1-2 minutes, watching closely to ensure the meringue lightly browns without burning.
