Ingredients:

2 large chicken breasts, halved lengthwise to create 4 cutlets
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably panko)
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
1/4 cup vegetable oil for frying
Lemon wedges for garnish (optional)
Instructions:

Set Up Your Breading Stations:

Arrange three shallow dishes: one with flour, one with beaten eggs, and one with a blend of breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
Bread the Chicken:

Coat each chicken cutlet with flour, shaking off any excess. Dip it into the beaten eggs, then coat evenly with the breadcrumb mixture, pressing lightly to ensure a good coating.
Fry the Chicken:

Heat vegetable oil in a large skillet over medium heat. Once the oil is ready, add the breaded chicken cutlets, frying in batches if needed to avoid overcrowding.
Cook each cutlet for about 3-4 minutes per side, or until they are golden brown and fully cooked (the internal temperature should reach 165°F/74°C).
Serve:

Transfer the cooked chicken cutlets to a plate lined with paper towels to drain off any excess oil.
Serve warm with optional lemon wedges for a fresh, tangy touch.
