Caramel Apple Cheesecake

 
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
2 packages (8 oz each) cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
1/2 cup sour cream
2 medium apples, peeled, cored, and sliced thin
1/2 cup brown sugar
1 tablespoon butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 cup heavy cream
1/2 teaspoon vanilla extract
 
 
Directions
1. Prepare the Crust: Preheat the oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a greased 9-inch springform pan to form the crust. Bake for 8-10 minutes, then remove from the oven and let it cool.
2. Make the Cheesecake Filling: In a large bowl, beat the softened cream cheese and sugar until smooth. Add the vanilla extract and mix. One at a time, beat in the eggs, ensuring each is fully incorporated before adding the next. Stir in the sour cream. Pour the cheesecake batter over the cooled crust and smooth the top.
3. Bake the Cheesecake: Place the cheesecake in the oven and bake for 55-60 minutes or until the center is set and the edges are lightly browned. Allow it to cool to room temperature, then refrigerate for at least 4 hours or overnight.
4. Prepare the Apple Topping: In a skillet, melt butter over medium heat. Add the sliced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are soft and caramelized, about 10-12 minutes. Stir in the vanilla extract and heavy cream, then cook for another 2 minutes until the sauce thickens. Remove from heat and let it cool.
5. Assemble the Cheesecake: Once the cheesecake is fully chilled, spoon the caramel apple topping over the cheesecake.
